Classic Blondie with Pecans

Classic Blondie with Pecans

Serves: 8-10 Prep Time: 20 min Bake Time: 35 min

These blondies are a delicious ooey-gooey cousin of a brownie and a chocolate chip cookie. They should be soft and chewy in the middle like a brownie, with the molasses and caramel flavors of a chocolate chip cookie. We developed this recipe for a CBS- Better Connecticut segment filmed for National Blonde Brownie Day in January, 2015. While we love our Kentucky Bourbon Blondie Bar, this a classic family friendly version you can make at home.

Ingredients:

12 Tb butter, melted and cooled

1 ¼ cup sugar

1 Tb molasses

2 eggs, beaten

3 tsp vanilla extract

1 tsp baking powder

½ tsp salt

1 ½ cups flour

1 cup chopped pecans

1 cup mini chocolate chips

Directions:

Preheat oven to 350 degrees. Grease and flour a 8” x 8” pan.
Whisk together flour, baking soda and salt, set aside.

Melt butter and let cool (slightly, do not let harden).
Combine butter, sugar, and molasses. Mix well.
Beat eggs slightly, add to butter mixture. Add vanilla. Mix well.

Stir flour mixture into butter mixture.
Fold in nuts and chocolate chips.
Spread into prepared pan, leveling surface of the batter.

Bake approx. 30- 35 minutes, or until golden brown.
Middle make have some shake to it, it will set up as it cools.
Cool in the pan. Serve and enjoy!

If using a dark pan, reduce temp to 325 degrees. Do not overbake.
You can substitute 3/4 cup of regular chips for the mini if you prefer.
