Caramel Bourbon Baked Apples
Serves: 6 Prep Time: 20 min Bake Time: 30 min
Full of oats and pecans, layered in caramel bourbon sauce, these baked apples are a treat you will make over and over. Easy and delicious, they make great individual portions for a dinner party. We love them served warm with vanilla ice cream.
Ingredients:
6 large apples (honeycrisp, golden delicious, braeburn or empire)
⅔ cup old fashioned oats
½ cup pecans, chopped
⅓ cup loosely packed brown sugar
½ tsp cinnamon
½ tsp nutmeg
½ tsp ginger
¼ cup unsalted butter, softened
¼ cup Matthews 1812 House Caramel Bourbon Sauce
+ additional for topping
1 tsp vanilla extract
1 cup apple cider
¼ cup bourbon
¼ cup maple syrup
Directions:
Preheat oven to 400 degrees.
Carefully core apples, removing the stem and cutting 2/3 of the way down to remove the seeds.
In a bowl combine oats, pecans, brown sugar, and spices.
Add in softened butter, caramel sauce and vanilla, and mix thoroughly with a fork until it crumbles.
Divide mixture evenly among apples, place stuffed apples in a large greased baking dish.
Whisk together apple cider, bourbon and maple syrup. Pour mixture over the apples and in the bottom of the pan. Bake for about 30 minutes, making sure to baste the apples with the cider bourbon mixture every 5-10 minutes.
Top apples with additional caramel sauce; serve warm with whipped cream or vanilla ice cream.
